Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In another bowl, beat butter and sugars until light and fluffy. Add pumpkin, egg, and vanilla, and beat until combined.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Drop dough by tablespoonfuls onto a baking sheet. Bake for 10-12 minutes or until edges are lightly browned.
  6. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
