Pumpkin Spice Granola Recipe

Main Ingredients
- 3 cups Rolled oats
- 1 cup Pumpkin puree
- ½ cup Maple syrup
- ¼ cup Coconut oil, melted
- 1 teaspoon Vanilla extract
- 1 tablespoon Pumpkin pie spice
- ½ teaspoon Salt
- 1 cup Pecans, chopped
- ½ cup Dried cranberries
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the oats, pumpkin puree, maple syrup, melted coconut oil, vanilla extract, pumpkin pie spice, and salt. Stir until well combined.
Spread the mixture evenly on the prepared baking sheet.
Bake for 30 minutes, stirring halfway through, until the granola is golden brown and crispy.
Remove from the oven and let cool completely. Stir in the chopped pecans and dried cranberries.
Store in an airtight container for up to two weeks.
