Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Sugar
  • 0.5 cups Melted butter

Filling

  • 24 oz Cream cheese softened
  • 1 cup Sugar
  • 1 cup Pumpkin puree
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Pumpkin pie spice
  • 0.5 cup Heavy cream

Instructions 

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla extract, and pumpkin pie spice. Mix until well combined.
  4. Pour filling over the crust. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
