Ingredients

  • 1 cup Butter softened
  • 1 cup Brown Sugar packed
  • ½ cup Granulated Sugar
  • 1 cup Pumpkin Puree
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ½ teaspoon Ground Cloves
  • 3 cups Old-Fashioned Oats
  • 1 cup Raisins

Instructions 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well blended.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
  6. Stir in the oats and raisins.
  7. Drop by rounded tablespoonfuls onto prepared baking sheets.
  8. Bake for 12-14 minutes, or until cookies are lightly browned.
  9. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
