Ingredients

  • 2 cups all-purpose flour
  • cup brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • ½ cup cold unsalted butter cut into small cubes
  • ½ cup pumpkin puree
  • ¼ cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, brown sugar, baking powder, salt, and pumpkin pie spice.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together pumpkin puree, heavy cream, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough out onto a floured surface and shape into a circle about 1-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 15-18 minutes or until golden brown. Let cool on a wire rack.
