  • 4 bell peppers tops cut off and seeds removed
  • 2 cups pumpkin puree
  • 1 cup cooked quinoa
  • 1 cup black beans rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese optional
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine pumpkin puree, cooked quinoa, black beans, cumin, chili powder, salt, and pepper.
  3. Stuff the bell peppers with the mixture and place them in a baking dish.
  4. Top with shredded cheese if using.
  5. Bake for 45 minutes or until the peppers are tender.
  6. Serve hot and enjoy!
