- 4 bell peppers tops cut off and seeds removed
- 2 cups pumpkin puree
- 1 cup cooked quinoa
- 1 cup black beans rinsed and drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese optional
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine pumpkin puree, cooked quinoa, black beans, cumin, chili powder, salt, and pepper.
Stuff the bell peppers with the mixture and place them in a baking dish.
Top with shredded cheese if using.
Bake for 45 minutes or until the peppers are tender.
Serve hot and enjoy!
