Main Ingredients
- 1 lb Chorizo cooked and crumbled
- 2 cups Shredded Oaxaca cheese
- 1 cup Shredded Monterey Jack cheese
- 1 Small onion diced
- 2 Jalapeños diced
- 1 tablespoon Olive oil
- 1 Tomato diced
- 1 handful Cilantro chopped
Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the diced onion and jalapeños, and cook until softened.
Add the cooked chorizo to the skillet and mix well.
In an oven-safe dish, layer the chorizo mixture, shredded Oaxaca cheese, and shredded Monterey Jack cheese.
Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven, top with diced tomato and chopped cilantro. Serve hot with tortilla chips.
