  • 2 medium beets cooked and diced
  • 1 cup arugula fresh
  • ¼ cup feta cheese crumbled
  • ¼ cup walnuts chopped

Dressing

  • 3 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced

  1. 1. Cook the quinoa: In a saucepan, bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes. Let it cool.
  2. 2. Prepare the dressing: In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, garlic, salt, and pepper.
  3. 3. Assemble the salad: In a large bowl, combine cooked quinoa, beets, arugula, feta cheese, and walnuts. Drizzle with dressing and toss to coat.
