Ingredients

  • 1 cup quinoa rinsed
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small tortillas
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1 cup cheese shredded
  • 1 cup salsa

Instructions 

  1. 1. Cook quinoa according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  3. 3. Stir in black beans, cumin, and chili powder. Cook for 5 minutes.
  4. 4. Add cooked quinoa to the skillet, mix well.
  5. 5. Warm tortillas in a separate skillet or microwave.
  6. 6. Assemble tacos with quinoa mixture, lettuce, tomatoes, cheese, and salsa.
