- 1 cup quinoa rinsed
- 1 can black beans drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 small tortillas
- 1 cup lettuce shredded
- 1 cup tomatoes diced
- 1 cup cheese shredded
- 1 cup salsa
1. Cook quinoa according to package instructions.
2. In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
3. Stir in black beans, cumin, and chili powder. Cook for 5 minutes.
4. Add cooked quinoa to the skillet, mix well.
5. Warm tortillas in a separate skillet or microwave.
6. Assemble tacos with quinoa mixture, lettuce, tomatoes, cheese, and salsa.
