Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 bunch kale chopped
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. In a mixing bowl, massage kale with olive oil and a pinch of salt until tender.
  4. 4. Add minced garlic to the kale and mix well.
  5. 5. Fluff quinoa with a fork and combine with kale mixture.
  6. 6. Season with salt and pepper to taste. Serve warm.
