Main Ingredients
- 1 cup quinoa cooked
- ½ cup bread crumbs
- ¼ cup grated Parmesan cheese
- 2 eggs beaten
- 1 small onion finely chopped
- 1 clove garlic minced
- ¼ cup fresh parsley chopped
- 1 tablespoon olive oil for frying
- Salt and pepper to taste
1. In a large mixing bowl, combine cooked quinoa, bread crumbs, Parmesan cheese, beaten eggs, chopped onion, minced garlic, and chopped parsley. Mix well.
2. Season the mixture with salt and pepper to taste.
3. Form the mixture into small patties.
4. Heat olive oil in a frying pan over medium heat.
5. Cook the patties in the pan for about 4-5 minutes on each side, or until golden brown and crispy.
6. Remove from the pan and drain on paper towels. Serve warm.
