Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. 5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or chill in the refrigerator for later.
