Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 red bell pepper diced
  • 1 zucchini diced
  • 1 red onion sliced
  • 2 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Cook quinoa in water according to package instructions. Set aside to cool.
  3. Toss bell pepper, zucchini, and red onion with olive oil, salt, and black pepper. Spread on a baking sheet.
  4. Roast vegetables in preheated oven for 20-25 minutes, until tender and slightly charred.
  5. In a large mixing bowl, combine cooked quinoa, roasted vegetables, and lemon juice. Toss to combine.
  6. Serve warm or chilled.
