- 1 cup cooked quinoa
- 1 cup mashed sweet potato
- ½ cup bread crumbs
- 1 egg beaten
- ¼ cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- to taste salt and pepper
- 2 tablespoon olive oil for frying
In a large mixing bowl, combine the cooked quinoa, mashed sweet potato, bread crumbs, beaten egg, green onions, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Form the mixture into small patties, about the size of your palm.
Heat the olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 3-4 minutes on each side, or until golden brown and crispy.
Remove from the pan and place on a paper towel-lined plate to drain any excess oil.
Serve warm with your favorite dipping sauce or as a side dish.
