Quinoa Veggie Bowl Recipe

Main Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- ¼ cup red onion, finely chopped
- 1 tablespoon olive oil
- 2 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
Rinse the quinoa under cold water.
In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
In a mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
Serve immediately or refrigerate for later.
