Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 1 can chickpeas drained and rinsed
  • 2 cups cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable broth
  • 1 cup water

Instructions 

  1. Rinse the quinoa under cold water using a strainer.
  2. In a saucepan, combine the quinoa, vegetable broth, and water. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  4. In a mixing bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, olive oil, ground cumin, salt, and black pepper. Mix well.
  5. Serve warm or at room temperature.
