Main Ingredients
- 1 unit eggplant diced
- 1 unit zucchini diced
- 1 unit yellow squash diced
- 1 unit red bell pepper diced
- 1 unit yellow bell pepper diced
- 1 unit onion diced
- 3 cloves garlic minced
- 2 tablespoon olive oil
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- to taste salt
- to taste black pepper
1. Heat olive oil in a large skillet over medium heat.
2. Add the diced onion and garlic, sauté until softened.
3. Add the eggplant, zucchini, yellow squash, and bell peppers. Cook until tender.
4. Stir in the diced tomatoes, thyme, and basil. Season with salt and pepper.
5. Simmer for about 20 minutes, stirring occasionally.
6. Serve hot.
