- 1 cup dried red beans soaked overnight
- 1 cup rice cooked
- 1 medium onion chopped
- 1 medium green bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoon thyme dried
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups water
1. Rinse and drain the soaked red beans.
2. In a large pot, sauté the chopped onion and green bell pepper until softened.
3. Add the minced garlic and cook for another minute.
4. Add the red beans, water, thyme, paprika, salt, and black pepper to the pot. Bring to a boil.
5. Reduce heat and simmer for about 1 hour, or until beans are tender.
6. Serve the beans over cooked rice.
