- 4 slices Whole grain bread
- ½ cup Red pepper hummus
- 1 Cucumber, sliced
- 1 Tomato, sliced
- 1 handful Spinach leaves
1. Spread red pepper hummus on two slices of bread.
2. Layer cucumber, tomato, and spinach leaves on top of the hummus.
3. Top with the remaining slices of bread.
4. Cut the sandwiches in half and serve.
