Ingredients

  • 400 g Pasta
  • 2 Red bell peppers sliced
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1 cup Heavy cream
  • ½ cup Parmesan cheese grated
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In a frying pan, heat the olive oil over medium heat. Add the sliced red bell peppers and cook until soft.
  3. 3. Add the minced garlic to the pan and cook for another minute.
  4. 4. Transfer the cooked peppers and garlic to a blender. Add the heavy cream and blend until smooth.
  5. 5. Pour the blended sauce back into the frying pan. Add the grated Parmesan cheese and stir until melted and combined.
  6. 6. Add the cooked pasta to the sauce and toss to coat. Season with salt and pepper to taste.
  7. 7. Serve hot, garnished with extra Parmesan cheese if desired.
