  • 2 lbs Red Potatoes cut into bite-sized pieces
  • ½ cup Mayonnaise
  • ¼ cup Dijon Mustard
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Chopped Green Onions
  • ¼ cup Chopped Fresh Dill

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes to the bowl and mix until well coated.
  4. 4. Gently fold in the chopped green onions and fresh dill.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
