Rhubarb Bread Recipe

Main Ingredients
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup buttermilk
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large mixing bowl, combine the rhubarb and sugar. Let it sit for a few minutes.
Add the buttermilk, vegetable oil, and vanilla extract to the rhubarb mixture. Stir well.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
