Ingredients 

Crumble Topping

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • ½ cup butter cold, cut into small pieces

Rhubarb Filling

  • 4 cups rhubarb chopped
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, oats, and brown sugar. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. In another bowl, mix rhubarb, granulated sugar, cornstarch, and vanilla extract.
  4. Spread the rhubarb mixture evenly in a baking dish. Sprinkle the crumble topping over the rhubarb.
  5. Bake for 45 minutes or until the topping is golden brown and the rhubarb is bubbly.
  6. Let it cool slightly before serving. Enjoy!
