Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 cup onion, finely chopped
  • ½ cup apple cider vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions 

  1. 1. Combine all ingredients in a saucepan over medium heat.
  2. 2. Bring to a boil, then reduce heat and simmer for about 30 minutes, stirring occasionally.
  3. 3. Once thickened, remove from heat and let cool.
  4. 4. Transfer to a jar and refrigerate. Serve chilled.
