Ingredients

  • 1 whole leg of lamb about 5-6 pounds
  • 4 cloves garlic sliced
  • 2 tablespoon fresh rosemary chopped
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Make small slits all over the lamb and insert garlic slices into each slit.
  3. Rub the lamb with olive oil, then season with rosemary, salt, and pepper.
  4. Place the lamb in a roasting pan and roast for 90 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. Let the lamb rest for 15 minutes before carving.
