Ingredients 

Main Ingredients

  • 4 medium beets trimmed and scrubbed
  • 4 oz goat cheese crumbled
  • 4 cups mixed greens
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender. Let cool, then peel and slice.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. In a large bowl, combine mixed greens, roasted beets, goat cheese, and walnuts. Drizzle with dressing and toss to coat.
  5. Serve immediately.
