Roasted Beet & Goat Cheese Salad
A delightful salad with roasted beets, creamy goat cheese, and a simple vinaigrette.

Main Ingredients
- 4 medium beets trimmed and scrubbed
- 4 oz goat cheese crumbled
- 4 cups mixed greens
- ¼ cup walnuts toasted
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- to taste salt and pepper
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender. Let cool, then peel and slice.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
In a large bowl, combine mixed greens, roasted beets, goat cheese, and walnuts. Drizzle with dressing and toss to coat.
Serve immediately.
