Main Ingredients
- 1 lb Carrots peeled and chopped
- 2 tablespoon Olive oil
- 1 teaspoon Ground cumin
- 1 teaspoon Paprika
- 1 clove Garlic minced
- 1 cup Greek yogurt
- 1 tablespoon Lemon juice freshly squeezed
- to taste Salt and pepper
Preheat your oven to 400°F (200°C).
Toss the carrots with olive oil, cumin, paprika, salt, and pepper. Spread them out on a baking sheet.
Roast the carrots for 30-40 minutes, until they are tender and slightly caramelized. Let them cool.
In a blender, combine the roasted carrots, garlic, Greek yogurt, and lemon juice. Blend until smooth.
Adjust seasoning with salt and pepper to taste. Serve with pita bread or vegetable sticks.
