Ingredients 

Main Ingredients

  • 1 lb Carrots peeled and chopped
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 clove Garlic minced
  • 1 cup Greek yogurt
  • 1 tablespoon Lemon juice freshly squeezed
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the carrots with olive oil, cumin, paprika, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the carrots for 30-40 minutes, until they are tender and slightly caramelized. Let them cool.
  4. In a blender, combine the roasted carrots, garlic, Greek yogurt, and lemon juice. Blend until smooth.
  5. Adjust seasoning with salt and pepper to taste. Serve with pita bread or vegetable sticks.
