  • 4 kohlrabi bulbs peeled and diced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground

Instructions 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and dice the kohlrabi bulbs into bite-sized pieces.
  3. In a large bowl, toss the diced kohlrabi with olive oil, salt, and pepper until evenly coated.
  4. Spread the kohlrabi pieces in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25 minutes, or until the kohlrabi is tender and golden brown, stirring halfway through.
  6. Remove from the oven and serve hot.
