Ingredients

  • 2 lbs Tomatoes halved
  • 1 cup Fresh basil leaves packed
  • 4 cloves Garlic peeled
  • 1 medium Onion chopped
  • 2 cups Vegetable broth
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved tomatoes and garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 30-40 minutes.
  3. In a large pot, heat some olive oil over medium heat. Add the chopped onion and cook until translucent.
  4. Add the roasted tomatoes, garlic, and vegetable broth to the pot. Simmer for 10 minutes.
  5. Remove from heat and add the fresh basil leaves. Use a blender to puree the soup until smooth.
  6. Season with additional salt and pepper to taste. Serve hot.
