Ingredients 

Main Ingredients

  • 2 cups penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ cup grated Parmesan cheese

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet, toss the cherry tomatoes, zucchini, and bell peppers with olive oil, salt, pepper, and oregano. Spread them out in an even layer.
  3. Roast the vegetables in the preheated oven for 20-25 minutes, until they are tender and slightly charred.
  4. While the vegetables are roasting, cook the penne pasta according to the package instructions. Drain and set aside.
  5. Once the vegetables are done, combine them with the cooked pasta. Toss everything together.
  6. Serve the pasta topped with grated Parmesan cheese.
