Main Ingredients
- 2 cups Sauerkraut drained
- 1 cup Carrots shredded
- 1 cup Bell Pepper chopped
- ¼ cup Onion finely chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Apple Cider Vinegar
- 1 teaspoon Sugar
- to taste Salt
- to taste Black Pepper freshly ground
In a large bowl, combine the sauerkraut, carrots, bell pepper, and onion.
In a small bowl, whisk together the olive oil, apple cider vinegar, and sugar.
Pour the dressing over the sauerkraut mixture and toss to combine.
Season with salt and freshly ground black pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
