Ingredients

  • 1 cup crab meat fresh or canned
  • 1 cup milk
  • 1 cup heavy cream
  • ¼ cup butter
  • ¼ cup flour
  • 1 tablespoon sherry
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. Melt the butter in a large pot over medium heat.
  2. Add the flour and whisk constantly until the mixture is smooth and bubbly.
  3. Gradually add the milk and heavy cream, whisking constantly until the mixture thickens.
  4. Add the crab meat, sherry, salt, and pepper. Stir well to combine.
  5. Simmer for about 20 minutes, stirring occasionally. Do not let it boil.
  6. Serve hot, garnished with a sprinkle of fresh parsley if desired.
