Ingredients 

Grits

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoon butter
  • 1 teaspoon salt

Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 4 slices bacon, chopped
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 tablespoon chopped parsley

Instructions 

  1. Bring water to a boil in a saucepan. Add salt and grits, then reduce heat to low. Cook, stirring occasionally, until water is absorbed and grits are thickened, about 20-25 minutes.
  2. Stir in butter and cheese until melted and smooth. Remove from heat and cover to keep warm.
  3. In a skillet, cook bacon over medium heat until crisp. Remove bacon and set aside, leaving the drippings in the skillet.
  4. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Add garlic and paprika, and cook for another minute.
  5. Stir in lemon juice and cooked bacon. Remove from heat.
  6. Serve shrimp mixture over grits, garnished with chopped parsley.
