Ingredients 

Main Ingredients

  • 8 oz pasta shells uncooked
  • 1 lb shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley chopped

Instructions 

  1. 1. Cook the pasta shells according to the package instructions. Drain and set aside.
  2. 2. In a large pot, bring water to a boil. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Drain and set aside.
  3. 3. In a large mixing bowl, combine the cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the pasta mixture and toss to coat evenly.
  6. 6. Garnish with fresh parsley and serve chilled or at room temperature.
