Instructions
1. Cook the pasta shells according to the package instructions. Drain and set aside.
2. In a large pot, bring water to a boil. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Drain and set aside.
3. In a large mixing bowl, combine the cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
5. Pour the dressing over the pasta mixture and toss to coat evenly.
6. Garnish with fresh parsley and serve chilled or at room temperature.
