Shrimp Ceviche Recipe

Main Ingredients
- 1 lb Shrimp, peeled and deveined small or medium size
- 1 cup Lime juice freshly squeezed
- ½ cup Red onion, finely chopped
- 1 cup Tomato, diced
- 1 cup Cucumber, diced
- ¼ cup Cilantro, chopped
- 1 unit Jalapeño, seeded and minced
- 1 teaspoon Salt to taste
1. In a large mixing bowl, combine shrimp and lime juice. Let it sit for 15 minutes until shrimp turns opaque.
2. Add red onion, tomato, cucumber, cilantro, jalapeño, and salt to the bowl. Mix well.
3. Serve immediately or refrigerate for up to 2 hours before serving.
