Shrimp Po' Boys Recipe

- 1 lb shrimp, peeled and deveined
- 1 cup buttermilk
- 1 cup cornmeal
- 1 cup flour
- 1 teaspoon Cajun seasoning
- 4 French rolls
- 1 cup shredded lettuce
- 1 tomato, sliced
- 1 cup mayonnaise
- 1 tablespoon hot sauce
1. In a bowl, mix buttermilk and hot sauce. Add shrimp and let marinate for 15 minutes.
2. In another bowl, mix flour, cornmeal, and Cajun seasoning.
3. Heat oil in a frying pan over medium heat.
4. Dredge shrimp in the flour mixture and fry until golden brown, about 2-3 minutes per side.
5. Drain on paper towels.
6. Mix mayonnaise and hot sauce to make the sauce.
7. Assemble the sandwiches: spread sauce on rolls, add lettuce, tomato, and shrimp.
