Ingredients 

Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup red wine
  • 2 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup pearl onions
  • 4 cloves garlic, minced
  • 2 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoon all-purpose flour
  • to taste salt and pepper

Instructions 

  1. 1. Season beef with salt and pepper. In a large skillet, heat oil over medium-high heat. Add beef and cook until browned on all sides. Transfer to slow cooker.
  2. 2. In the same skillet, add garlic, tomato paste, thyme, and rosemary. Cook for 1-2 minutes. Sprinkle flour over and stir well. Add wine and broth, bring to a simmer.
  3. 3. Pour mixture over beef in slow cooker. Add carrots and onions. Stir to combine.
  4. 4. Cover and cook on low for 8 hours or until beef is tender.
  5. 5. Serve hot, garnished with fresh parsley if desired.
