Slow Cooker Oxtail Stew Recipe
A hearty and flavorful oxtail stew made easy in the slow cooker.

Main Ingredients
- 2 lbs oxtail
- 1 large onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 cup carrots sliced
- 1 cup celery sliced
- 1 tablespoon tomato paste
- 1 teaspoon thyme dried
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon vegetable oil
1. Heat the oil in a large skillet over medium-high heat. Brown the oxtail on all sides.
2. Transfer the oxtail to the slow cooker.
3. Add the onion, garlic, carrots, and celery to the skillet. Cook until softened, about 5 minutes.
4. Stir in the tomato paste, thyme, paprika, salt, and pepper. Cook for another minute.
5. Pour in the beef broth and bring to a simmer.
6. Transfer the mixture to the slow cooker, covering the oxtail.
7. Cover and cook on low for 8 hours, or until the oxtail is tender.
8. Serve hot, garnished with fresh herbs if desired.
