Ingredients 

Main Ingredients

  • 6 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Cheddar cheese, shredded
  • 4 slices Bacon, cooked and crumbled
  • 2 tablespoon Chives, chopped

Instructions 

  1. 1. Add potatoes, onion, and chicken broth to the slow cooker.
  2. 2. Cook on low for 8 hours or until potatoes are tender.
  3. 3. Use an immersion blender to puree the soup until smooth.
  4. 4. Stir in heavy cream, salt, and pepper. Cook for an additional 30 minutes.
  5. 5. Serve hot, topped with cheddar cheese, bacon, and chives.
