Main Ingredients
- 2 large cucumbers smashed and cut into bite-sized pieces
- 1 teaspoon salt
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds toasted
1. Smash the cucumbers with a rolling pin or the flat side of a knife, then cut into bite-sized pieces.
2. Place the cucumbers in a bowl and sprinkle with salt. Let sit for 10 minutes, then drain any excess liquid.
3. In a small bowl, mix together the garlic, soy sauce, rice vinegar, sugar, and sesame oil.
4. Pour the dressing over the cucumbers and toss to coat.
5. Sprinkle with toasted sesame seeds before serving.
