  • 1.5 lbs baby potatoes
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Boil potatoes until tender, about 15 minutes.
  3. Drain and place on a baking sheet.
  4. Smash each potato with a fork.
  5. Drizzle with olive oil, sprinkle garlic powder, rosemary, salt, and pepper.
  6. Bake for 20 minutes or until crispy.
