Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper diced
  • 1 small red onion diced
  • ¼ cup cilantro chopped
  • 1 large avocado diced

Dressing

  • ¼ cup olive oil
  • 2 tablespoon lime juice freshly squeezed
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions 

  1. 1. Rinse quinoa under cold water. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
  2. 2. In a large mixing bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red bell pepper, red onion, cilantro, and avocado.
  3. 3. In a small bowl, whisk together olive oil, lime juice, ground cumin, chili powder, minced garlic, salt, and pepper.
  4. 4. Pour dressing over the quinoa mixture and toss to combine. Serve chilled or at room temperature.
