Spanish Rice with Ground Beef

- 1 lb Ground Beef
- 1 cup White Rice uncooked
- 1 can Diced Tomatoes 14.5 oz can
- 1 cup Chicken Broth
- 1 small Onion chopped
- 1 clove Garlic minced
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 tablespoon Olive Oil
Heat olive oil in a large skillet over medium heat.
Add chopped onion and minced garlic, cook until softened.
Add ground beef, cook until browned. Drain excess fat.
Stir in rice, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until rice is tender.
Fluff with a fork and serve hot.
