Spiced Zucchini Carrot Muffins

- 1 cup grated zucchini
- 1 cup grated carrot
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.25 teaspoon salt
- 2 eggs large
- 0.75 cup sugar
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, beat the eggs and mix in the sugar, vegetable oil, and vanilla extract until well combined.
Stir in the grated zucchini and carrot into the wet ingredients.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
