Ingredients 

Main Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • ½ cup breadcrumbs
  • 1 large egg beaten
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoon olive oil for cooking

Instructions 

  1. 1. In a food processor, pulse the black beans until they are mostly smooth.
  2. 2. Add the corn, breadcrumbs, egg, chili powder, cumin, salt, and pepper. Pulse until combined.
  3. 3. Form the mixture into 4 patties.
  4. 4. Heat the olive oil in a skillet over medium heat.
  5. 5. Cook the patties for about 4-5 minutes on each side, until they are golden brown and cooked through.
