Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 1 can black beans, drained and rinsed 15 oz
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup chopped cilantro
  • ¼ cup crumbled feta cheese
  • Lime wedges for serving

Instructions 

  1. Heat olive oil in a pan over medium heat. Add diced onion and cook until soft.
  2. Add minced garlic, cumin, chili powder, smoked paprika, and cayenne pepper. Cook for another minute.
  3. Stir in black beans and cook until heated through. Season with salt and pepper.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble tacos by adding black bean mixture to each tortilla. Top with lettuce, tomatoes, cilantro, and feta cheese.
  6. Serve with lime wedges.
