Ingredients

  • 8 oz Rice noodles
  • ¼ cup Peanut butter
  • 2 tablespoon Soy sauce
  • 1 tablespoon Sriracha
  • 1 tablespoon Honey
  • 1 tablespoon Lime juice
  • 2 cloves Garlic, minced
  • 1 tablespoon Sesame oil
  • 2 tablespoon Green onions, chopped
  • ¼ cup Chopped peanuts
  • 1 cup Shredded carrots
  • 1 cup Bean sprouts

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a mixing bowl, whisk together peanut butter, soy sauce, sriracha, honey, lime juice, minced garlic, and sesame oil until smooth.
  3. 3. Toss the cooked noodles with the peanut sauce until well coated.
  4. 4. Add the green onions, chopped peanuts, shredded carrots, and bean sprouts. Toss to combine.
  5. 5. Serve immediately, garnished with extra green onions and peanuts if desired.
