Main Ingredients
- 500 g Pork Shoulder cut into cubes
- 2 tablespoon Vegetable Oil
- 1 Onion finely chopped
- 3 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Curry Powder
- 1 teaspoon Chili Powder
- 400 ml Coconut Milk
- 1 cup Chicken Broth
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 Lime juiced
- 2 tablespoon Cilantro chopped, for garnish
- Heat the oil in a large pot over medium heat. Add the chopped onion and cook until softened. 
- Add the garlic and ginger, cook for another minute. 
- Add the pork cubes and cook until browned on all sides. 
- Stir in the curry powder and chili powder, cook for another minute. 
- Pour in the coconut milk and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes. 
- Season with salt and pepper to taste. Stir in lime juice. 
- Garnish with chopped cilantro before serving.
