Main Ingredients
- 500 g Pork Shoulder cut into cubes
- 2 tablespoon Vegetable Oil
- 1 Onion finely chopped
- 3 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Curry Powder
- 1 teaspoon Chili Powder
- 400 ml Coconut Milk
- 1 cup Chicken Broth
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 Lime juiced
- 2 tablespoon Cilantro chopped, for garnish
Heat the oil in a large pot over medium heat. Add the chopped onion and cook until softened.
Add the garlic and ginger, cook for another minute.
Add the pork cubes and cook until browned on all sides.
Stir in the curry powder and chili powder, cook for another minute.
Pour in the coconut milk and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste. Stir in lime juice.
Garnish with chopped cilantro before serving.
