Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Onion, chopped
  • 1 cup Green bell pepper, chopped
  • 1 cup Celery, chopped
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes (14.5 oz)
  • 1 tablespoon Tomato paste
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • ¼ teaspoon Cayenne pepper
  • 2 tablespoon Olive oil
  • 1 cup Chicken broth
  • 2 tablespoon Fresh parsley, chopped
  • 4 cups Cooked white rice

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in garlic and cook for another minute.
  4. 4. Add diced tomatoes, tomato paste, Cajun seasoning, salt, black pepper, and cayenne pepper. Stir well.
  5. 5. Pour in chicken broth and bring to a simmer. Cook for 10 minutes.
  6. 6. Add shrimp and cook until pink and cooked through, about 5 minutes.
  7. 7. Stir in fresh parsley. Serve over cooked white rice.
