Spinach Salad with Warm Bacon Mustard Dressing

Salad Ingredients
- 6 cups fresh spinach
- 4 slices bacon chopped
- ¼ cup red onion thinly sliced
- ¼ cup sliced mushrooms
Dressing Ingredients
- 3 tablespoons bacon grease
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- 1 pinch salt
- 1 pinch black pepper
Cook bacon in a skillet over medium heat until crispy. Remove bacon and set aside, reserving the bacon grease.
In a mixing bowl, whisk together the bacon grease, red wine vinegar, Dijon mustard, sugar, salt, and black pepper until well combined.
In a large bowl, combine the spinach, red onion, and mushrooms. Pour the warm dressing over the salad and toss to coat.
Top the salad with the cooked bacon pieces. Serve immediately.
