Ingredients 

Salad Ingredients

  • 6 cups fresh spinach
  • 4 slices bacon chopped
  • ¼ cup red onion thinly sliced
  • ¼ cup sliced mushrooms

Dressing Ingredients

  • 3 tablespoons bacon grease
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1 pinch salt
  • 1 pinch black pepper

Instructions 

  1. Cook bacon in a skillet over medium heat until crispy. Remove bacon and set aside, reserving the bacon grease.
  2. In a mixing bowl, whisk together the bacon grease, red wine vinegar, Dijon mustard, sugar, salt, and black pepper until well combined.
  3. In a large bowl, combine the spinach, red onion, and mushrooms. Pour the warm dressing over the salad and toss to coat.
  4. Top the salad with the cooked bacon pieces. Serve immediately.
